This speciality, made to a recipe supplied by the archivist of Lucerne’s Pfistern Guild, features a crispy puff pastry vol-au-vent containing pieces of stewed and roast veal and raisins in brandy in a tasty dark sauce, accompanied by fresh seasonal vegetables.
